Parmigiano-Reggiano D.O.P. Grana Padano and Parmigiano-Reggiano are probably the most famous cheeses from Italy. Both are cows milk cheese from northern Italy in the great Po River plain. 'Grana' is produced in a larger area (this is why it is usually less expensive) generally north of the Po River and 'Parm' is made generally south of the Po with the city of Parma as ground zero.
They are both made in very similar manners but Grana is made from all skim milk and Parm is made from skim and whole milk. There are other differences, but whichever you pick it will be the best thing you can grate on your bowl of spaghetti.
We are offering two wedges, 7 oz. and 2 lb. Both are cut from whole aged wheels in the Soresina plant in Italy where they are shrunk-wrapped and labeled. They are the real thing, D.O.P. Parigiano-Reggino. |
