This is a great chance to do a comparative tasting of the three highest calibers of Parmigiano Reggiano. "Parm" is the king of cheeses, and these rare and small production versions are the pinnacle of all Parms. There is a piece of white cow raised in free roaming high mountain fields, a piece of the famous Red Cow (Vacche Rosse), and a piece of the very rare Brown Cow (Vacca Bruna).
