Early Harvest and Immediate Processing

The 2025 olive harvest stands out for its remarkable quality. Olives are picked and crushed at the very beginning of the harvest, ensuring that most of the fruit remains green and packed with flavor. This process captures the essence we seek in freshly pressed olive oil: an intense, fruity taste with a lively character and a vivid green color. After crushing, the oil is bottled immediately and remains completely unfiltered. It is then rushed by air shipment to us here.

Olivestri: World-Class Production

Olivestri’s olive oil ranks among the world’s finest. Their production methods are exceptionally careful—every olive is pressed within hours of being harvested. The oil is a blend of regional olive varietals, including Leccino, Frantoio, Moraiolo, and Dolce Agogia. The olive mill (frantoio) is in the tiny Umbrian town of Petrignano del Lago, near Lake Trasimeno and the Tuscan border, close to Cortona and Montepulciano.  In this region, the gentle, rolling Colli del Trasimeno hills create a unique microclimate, giving the oil a creamy, soft texture. Despite the oil’s peppery finish, it lacks bitterness, making it versatile for many culinary uses.

About Frantoio Olivestri

The olive oil of Olivestri is among the finest in the world. They are produced with extreme care, ensuring that all olives are crushed within hours of being picked. They are a blend of olive varietals typical of the region: Leccino, Frantoio, Moraiolo, and Dolce Agogia. The frantoio (olive mill) is in the tiny Umbrian town of Petrignano del Lago on the Tuscan border near the shores of lake Trasimeno and very near and the towns of Cortona and Montepulciano. Here the Colli del Trasimeno (hills of Trasimeno) are soft and rolling, creating a microclimate that imparts a gentle, creamy texture to the oil. Even though the nuovo has quite a peppery finish, it is still void in bitterness, making it suitable for a wide breadth applications.
